Auntie Lenore's Spinach Lasagna

This is a one pan bachelor's delight!  My aunt Lenore told me about this one after I set off to college and began cooking for myself.  I have been making this recipe (or a subtle version of it) for years. 

  1. 1 lbs. package of lasagna noodles
  2. 1 lbs. package jack cheese (roughly shredded)1 lbs. package Ricotta cheese (or substitute 16 oz. of low-cal cottage cheese for a less fattening version)
  3. 1 bunch of fresh spinach (washed clean and dried)
  4. Fresh marinara sauce (or you can subsitute 1 of the shelf bottle of marinara or spagetti sauce)
  5. 1 can sliced black olives
  6. 1 egg

5 T butter
1 c. minced onion
1 c. minced celery
1 pound of andouille sausage, cut in small cubes
6 c. corn bread, crushed or broken up into pieces
2 cup of chicken stock
1/2 t salt
freshly ground pepper to taste
1 T fresh thyme
1t fresh sage

From a close friend of the family. This is the best tasting chili I have ever had! I dream about this one...!

1 lb. Chorizo
1 lb. Hamburger
2 lb. Stew meat
4-6 links, sweet Italian sausage
1 large can pinto beans
1 can kidney beans
1 can garbanzo beans (optional)
1 jar La Victoria salsa
1 large can stewed tomato
3 T. red chili powder
1 tsp. Black pepper
½ can beer

Grilled Snapper Vera Cruz
I usually look for things that are easy to prepare and not a lot of cleanup - this one fits the bill!   This is a receipe I found that was very easy to make and extremely tasty!

  1. 4 snapper fillets, 6 ounces each
  2. 2 tablespoons olive oil
  3. Salt and freshly ground pepper
  4. 2 tablespoons olive oil
  5. 1 large onion, finely sliced
  6. 2 cloves garlic, finely chopped
  7. 1/4 cup dry white wine
  8. 2 large tomatoes, chopped
  9. 1/4 cup green olives, pitted and chopped
  10. 2 tablespoons capers, drained
  11. 1 serrano pepper, finely chopped  (these can be skipped if you prefer a milder taste.)
  12. 1/2 teaspoon sugar
  13. 1 bay leaf

Hot Potato Salad
A hearty treat.  I love potato salad with a hot dressing!

  1. 18 small new potatoes (about 2\" dia.), scrubbed but not peeled
  2. 6 slices bacon, diced
  3. ½-cup diced onion
  4. 1-tsp flour
  5. 1-tsp sugar
  6. 1-tsp salt
  7. ½-tsp freshly ground pepper, or to taste
  8. 3-Tbs. cider vinegar
  9. ¼-cup water
  10. 1-Tbs. minced fresh parsley
