Regina's Chili PDF Print E-mail

From a close friend of the family. This is the best tasting chili I have ever had! I dream about this one...!

1 lb. Chorizo
1 lb. Hamburger
2 lb. Stew meat
4-6 links, sweet Italian sausage
1 large can pinto beans
1 can kidney beans
1 can garbanzo beans (optional)
1 jar La Victoria salsa
1 large can stewed tomato
3 T. red chili powder
1 tsp. Black pepper
½ can beer


Cook meat separately in olive oil. Combine together in large pot, Dutch oven or crockpot. Mix in salsa, chili powder, pepper, beer and stewed tomatoes. Cook over low heat for 20 min. Add beans and cook over low heat for at least 1 hour. The longer it cooks, the HOTTER it gets and the more tender the meat. For crockpots: cook on low overnight or on high for 3-4 hrs. For Dutch oven: cook in 300 degree oven with lid on for 3-4 hrs. Note: for less heat in the chili, use less chili powder and salsa.
